The Adelaide Hills Distillery leans hard into a sense of place, foraging and using native Australian botanicals to build gins that taste distinctly of this country - green ant gin among them. The range runs through classic dry styles, vodka and a growing whisky program.
Its home at LOT.100 in Hay Valley, near Nairne, is shared with Mismatch Brewing and The Hills Cider Company, and is open Wednesday to Sunday, 11am to 5pm. Tasting flights walk you through the botanicals and the thinking behind them.
